Rice Flour Madeira Cake
You need: rice flour, ground almonds, butter, sugar, eggs, lemon, vanilla, milk, baking powder, salt

Cream the butter with the sugar and lemon zest.

Add the eggs and vanilla.

Sift the rice flour with the almonds, baking powder and salt and add them too.

Finally mix in a splash of milk.

Pour into a loaf tin and bake for 50 minutes.

It’s ready when an inserted toothpick comes out clean and you can see it’s signature crack on the surface.

Sprinkle sugar over the top, leave to cool before serving.
