Ricotta And Chocolate Cake
What you'll need
450g
Ricotta
150g
Granulated Sugar

Eggs
50g
Potato Flour
1/4 tsp
Lemon Extract
Orange Zest
1/4 tsp
Vanilla Extract
100g
Chocolate Chips
Icing Sugar
First of all separate the egg whites from the yolks

Beat the egg whites of the 4 eggs until stiff

The mixture must be airy, light and clear, just like snow

Add 150g of sugar to the yolks and mix with electric whisk

Add 1/4 tsp of vanilla extract and grated orange peel

Add 1/4 tsp of lemon extract

Mix well everything, the mixture must be smooth and airy

Add 450g of Ricotta cheese

Mix everything well until the mixture is free of lumps

Then add 50g of potato flour

Make sure the mixture is smooth and well blended

Add the previously whipped egg whites

Mix everything well with a spatula, until the mixture is smooth and free of lumps

Add the chocolate chips to the mixture, leave them a few on the side to put them on top of the cake

Cover the baking pan with parchment paper

Add the mixture inside the baking pan

Add the chocolate chips previously left aside

Bake at 180°C for 45 minutes
