Get ready: 15 oz ricotta, 1/2 c Parmesan, 1 egg, 1/4 c fresh basil, 1 c flour, marinara

Bring large pot of water to a boil.

Add ricotta cheese, Parmesan, egg and basil to a small batter bowl and blend.

Sift 1/2 cup of flour over the cheese mixture. Blend to combine.

Sift another 1/2 cup of flour into cheese mixture. Blend to combine.

Dust a pastry mat with flour. Turn out cheese mixture and fold by hand.

Using a small stainless scoop to make 1 Tbsp dumplings. Roll and set aside.

Once all dumplings have been formed, it’s time to cook them.

Carefully drop dumplings into water until they float(3-4 mins). Drain completely. Place in bowl.

Add warm marinara and coat dumplings. Serve with toast and salad.
