Roast pork Loin & Apple Jalapeno Chutney
Pat roast dry and season with your choice of seasoning. I'm using a citrus mojo seasoning blend.

Place into 500 F oven for 20 min. This is called "oven sear".

After 20 minutes, check on roast to see that it is starting to brown. Return to oven and lower temperature to 350 F.

Meanwhile, lets start the chutney. Dice red onion, bell pepper and finely dice a jalapeno.

Lightly saute in olive oil. Add one bay leaf.

Core, peel and slice 3 apples.

Add to pan with brown sugar, cider vinegar, orange juice, lemon juice & salt. Continue to cook on medium low heat until apples are soft. Turn off heat

Once roast reaches an internal temp of 140-145 F, it is done!

Allow to rest 15-30 minutes before slicing. Don't worry, it will still be hot.

Arrange on platter.

Top with warm apple jalapeno chutney and serve.
