Cut the stalks off of the top of the bulb.

Trim the root end, as well, and remove the tougher outer layer.

Cut the bulb in half lengthwise.

Lay flat and cut into 1/4 to 1/2-inch thick slices.

Spread onto a baking sheet. Toss with olive oil, salt, and pepper.

Roast for 20-25 minutes, tossing halfway through, until it starts to brown and caramelize.
