Roasted Garlic Cauliflower Hummus
1 head (cut into florets)
Cauliflower
4 tablespoons (divided)
Extra Virgin Olive Oil
1/2 teaspoon
Salt
1/4 teaspoon

Tahini
2 tablespoons

Prep your ingredients before you begin.

Trim garlic. Put on foil with drizzle of oil. Toss cauliflower with 1 Tbsp oil, salt and pepper.

Wrap garlic tightly. Roast at 425F for 20-25 minutes. Garlic may need additional time to become soft

Add 4 garlic cloves, cauliflower, tahini, and lemon juice to a food processor.

Process, drizzling in remaining 3 Tbsp of olive oil until it reaches your desired consistency.

Garnish with paprika, cilantro, and a drizzle of olive oil, if desired. Enjoy!
