Roasted Garlic Mashed Potatoes
Put 30 cloves of peeled garlic on a sheet of foil

Add olive oil and a few grinds of pepper and sea salt and seal & bake at 375 F for 40 minutes

Peel enough Yukon gold potatoes to fill bottom of a Dutch oven

Cut potatoes in half or thirds to help cook evenly

Cover with cold water and bring to boil. Boil for 15-20 minutes until fork tender

Remove roasted garlic from oven and allow to cool

Mash roasted garlic with side of knife

Form a paste

Using a Potato Ricer, rice all the potatoes

Add 1 1/2 stick butter & mashed roasted garlic
10
Add about a 1/4 cup sour cream and salt
