Roasted Greek Lemon Potatoes

What you'll need
Extra Virgin Olive Oil
Broth (Chicken or Vegetable or Water)
2 — juice and zest
Preheat oven to 425°F. Cut potatoes into wedges.
Toss in a roasting pan with olive oil, garlic, salt, pepper, oregano, and lemon.
Pour in broth/water around the wedges.
Roast for 30 minutes. Toss and roast for 15-20 more minutes.
Remove from oven. Garnish with parsley (optional) and additional lemon to taste.
