Roasted Italian Veggies
Cube 1 eggplant

Chop 1 onion, 4-5 garlic cloves and a sweet pepper

Halve some grape tomatoes

Add all veggies to a bowl and drizzle on 2 tbsp of extra virgin olive oil

Sprinkle with 1 tsp salt, 1 tbsp each dried thyme and oregano

Spread veggies out on a rimmed sheet pan

Roast in oven set at 400 for 20 minutes

Add to pasta, crostini, sandwiches, salads!
