Peel, core and slice 2 apples

Remove silverskin from tenderloin; rub pork with 1 tbsp oil and 1 and 1/2 tsp salt

Sear pork in 1 tbsp oil on all sides

Remove tenderloins; set aside

Add onions and apples to pan, adding additional oil if needed, sauteed for @ 5 minutes

Add 1 tsp thyme

Slather tenderloins with 1 tbsp dijon mustard, sprinkle with 2 tsp thyme

Bake at 425 degrees for 10-15 minutes, or until pork reaches 145 degrees

Set aside pork, add 1 cup chicken broth, simmer on stove.
