Remove roast from refrigerator 30 to 45 minutes before baking to allow to come to room temperature.

Pat dry with paper towels.

Season on all sides with kosher salt and black pepper.

Put in 500 F oven for 20 minutes to oven sear the outside of the roast.

Turn temperature down to 350 and continue roasting until internal temp reaches 115 F.

Turn off oven but leave roast in until the internal temp reaches 120-125 F for rare to mid-rare.

If at anytime the outside starts to brown too much, cover with foil. Remove from oven and let rest 30 minutes.

Carve into thin slices.

Pairs wonderfully with horseradish cream sauce!
