Prepare your ingredients before you begin.

Peel rutabaga then trim top and bottom edges. Cut into 1/2 to 1-inch thick slices, and cube.

Toss the rutabaga with the olive oil and season with salt and pepper. Spread onto a baking sheet.

Roast for 30-40 minutes, tossing at least once during roasting, or until fork tender.
