Roasting Whole Eggplant
Start with 3 Chinese eggplants- wash, remove label, no need to peel skin before cooking
Place on a parchment lined baking sheet and cut a few slits with a sharp knife

Preheat oven (350-375 F depending on oven)
Carefully place tray with whole eggplants in the preheated oven

Set timer to 40 minutes

Set a timer for 10 minutes, remove the tray, and flip each eggplant using tongs - place back in oven

Flip again after another 10 minutes...
