Add egg whites to a stand mixer with whisk attachment and set to low-medium speed.

Add pure vanilla extract

Gradually add in the powdered sugar (sifted, if lumpy) until the mixture is glossy

Stop to scrape the sides down, if needed

The icing should look like this when it’s done, glossy & white with stiff peaks.

Divide into as many colors as you like.

Add the gel food color(s) to the icing.

Mix the food coloring in, add more if you want.

Mix until you get the desired colors you want.

Tip: Make sure to cover or else it dries quickly.

Place a piping bag over a tall glass or jar.

Fill the pastry bag with the royal icing

Shake the icing bag to move the frosting to the tip of the bag.

Twist the pastry bag and make a knot, repeat for the other colors.
