Salmon Potato Patties
Mash up a baked potato (this is a great use for leftovers!)

Add a drained can of salmon.

Add salt, pepper, lemon and eggs.

Form into patties and place on hot oiled skillet.

Flip and cook other side. Hold in warm oven until they are all done.

Serve with tartar sauce and a squeeze of lemon.
