Salmon Sausage Rolls
Place salmon in a medium size bowl and flake with a fork

Add dill, chopped chives and dried seasoning

Bread crumbs, lemon zest and juice and egg

Along with the horseradish cream (see post for other options) and mix well to combine

Make sure to mix it enough that it holds its shape when pressed

Rollout one sheet of puff pastry

Use a rolling pin to roll out and flatten the edges

Cut into two equal pieces

Spoon out half the filling across the long side of the pastry

Press to form into a uniform’ish log

Fold one side of the pastry over filling,brush edge of the other side with egg wash and fold that side over

Flip it so it’s sitting seam side down then brush it all over with egg wash

Sprinkle with sesame seeds

Transfer to baking sheet

Then repeat with the remaining piece of pastry and filling - transfer to baking sheet and feeeze for 10 min while preheating oven

Freezing makes it easier to slice them without squishing them - they will hold shape better

Place back on baking sheet - poke a little vent into the centre of each one and bake
