Santa Fe Chicken Foil Packs!
Preheat oven to 375 degrees. Spray aluminum foil with nonstick cooking spray.

Place 1 boneless, skinless chicken breast in the middle of the foil.

Season generously with Pampered Chef’s Chili Lime Seasoning, salt, and garlic powder.

Layer a spoonful of black beans on top of the chicken.

Add largely chopped bell pepper and tomato.

Add about 1/4 cup of whole kernel corn & about a tablespoon of chopped canned jalapeños.

Season the veggies with the Pampered Chef Chili Lime Seasoning.

Tightly wrap the foil pack together, and crimp the ends together to make a tight seal.

Place your foil packs on an aluminum-lined sheet pan for easy cleanup! Bake for 30 minutes.

Open the packs, and top with your favorite shredded cheese! Pepper jack would be great!

Serve over a bed of rice (that I added a squeeze of lime juice to after cooking). Enjoy!
