Sausage Lentil Soup is an easy, one pot dinner the whole family will love. It’s hearty, packed with veggies, and a smoky flavor from the sausage.

Gather and prep your ingredients.

Brown the sausage and bacon, then drain most of the cooking fat.

Add the onion, celery, parsnips, and fennel. Cook until beginning to soften. Then add the garlic, salt, and pepper.

Deglaze with red wine, then add the beef stock, lentils, and bay leaves. Simmer about 40 minutes until the lentils are soft but not mushy.

Remove from the heat, and stir in the spinach and basil until wilted.

Taste for seasoning, and adjust salt and pepper if needed. Serve in individual bowls with any desired toppings.
