Sausage Orecchiette Broccolini & Lemon
1 lb sausage, 1 lb orecchiette,onion, 2 packs broccolini chopped and florettes white wine and stock

Oh and don’t forget 2-3 cloves garlic!

And grated cheese for finishing

Sauté sausage in large heavy bottom pan and break up as it cooks

The sound and smell is amazing!

Add onion and sauté with sausage until translucent. Add salt, pepper and Italian seasoning.

Reduce heat to medium and add zest of one small lemon

Then juice of half of lemon, stir and let reduce.

Boiled and salt pasta water in a separate pan.

Cover and bring back to rolling boil.

Deglaze pan with wine and am chicken stock. Couple of turns of each. Allow to reduce and cook out.

Stir the pasta and set a timer to boil for 2 minutes less than recommended to cook.

Stir meats and acids. Inhale the amazing aroma! 🙃

Add stocks of broccolini only... stir in .

Cover for 2 minutes and let broccolini stocks cook

Add 2-3 ladles of starchy pasta water and lemons . Stir .

Let pasta water cook down.

Using a scoop, add just pasta to the mix and stir to incorporate.

Add the florets and cover for 1-2 minutes.

Stir and add more ladles of starchy water if you like it saucier. Add butter and let it melt.

Almost ready to plate! 😍

Garnish with your favorite cheese and enjoy!
