Sausage Penne With A Spicy Twist

Half a packet
Penne Pasta
3 cloves
Fresh Minced Garlic

Banana Shallots
4 pcs
Sausages (your Choice)
1 pc
Bell Pepper
125g Mushrooms Button
Chopped Tomatoes
150 ml
Red Wine
150 ml
Stock - Pork
1 tbsp
Tomato paste
3 tbsp
RoniB’s Kitchen Black Bean Chilli Oil
Buy
1 Tsp Of Sea salt
To taste
Ground Black Pepper
Cook penne pasta as instructed in the packet

Heat about a tablespoon of oil in a pan

In a separate pan, reduce red wine to half. Add the stock and reduce to half. Set aside.

Add onions and cook till soft

Add minced garlic cloves

Add RoniB’s Kitchen Black Bean Chilli Oil

Mix and cook for about a minute to release the flavours

Add the sausages (taken out of skin) and break it up

Add bell peppers, mushrooms and mix. Cook for about 2 minutes.

Add chopped tomatoes. Mix well. Add the red wine reduction.

Add the tomato paste. Stir.

Season with salt and pepper to taste

Add cooked penne and stir making sure pasta is coated well.

Top with grated Parmesan, coriander or parsley (your choice). Enjoy!
