Savory Lentil Soup

Tomato paste

Chopped Tomatoes
1/4 cup
Red Wine Vinegar

Bay leaves
2 quarts
Broth (Chicken or Vegetable or Water)
1 bunch
Cilantro or Parsley, chopped
Crumbled for garnish
Feta Cheese (optional)

Extra Virgin Olive Oil
1 teaspoon
Kosher Salt
1 teaspoon
Black Pepper
1 pound
Lentils, rinsed
In a large pot, cook onion in olive oil with salt & pepper for 5 min. until onion is translucent.

Add carrot, celery, garlic, cumin, and oregano. Cook for 5 minutes more.

Dilute tomato paste with vinegar. Pour into pot along with the tomatoes and lentils. Cook 5 minutes.

Add your broth or water, and bay leaves. Bring to a boil. Cover and simmer for 30-45 minutes.

Remove bay leaves. Stir in parsley or cilantro.
