Savory Peach Chicken Kabobs
What you'll need
1 lb
Boneless Skinless Chicken Breast

Peaches

Sweet Onion
1/3 cup
White Balsamic Vinegar
1 clove
Garlic
2 tbsp
Brown Sugar
1/4 tsp
Pepper
1/4 tsp
Salt
2 tbsp
Olive Oil
1 1/2 tbsp
Chopped Fresh Basil
Peel, pit and chop 1 peach & place into a small food processor or blender

Purée until smooth

In a bowl, add 1/3 cup white balsamic vinegar

1 clove garlic, minced

2 tbsp brown sugar

Whisk until combined

Whisk in olive oil until blended

Stir in peach purée

Add fresh chopped basil

Whisk until mixed

Chop chicken breasts into 2-3 inch cubes

Chop onion into 2-3 inch pieces

In a baking dish, pour marinade on top of chicken & onions. Cover & refrigerate for several hours

Cut peaches into chucks big enough to skewer

Assemble kabobs layering onto skewers

Grill at 375 degrees F for 8-10 minutes, turning several times, until done

Garnish with fresh chopped basil & serve
