Savory Roasted Butternut Squash
Roasting butternut squash concentrates the sweet, nutty flavor.

You will need these ingredients, plus salt and pepper.

Cut the top and bottom off the squash to provide a stable surface for peeling.

After peeling, cut the squash in half lengthwise, and scoop out the seeds.

Cut into strips, then cubes.

Place the cubed squash in a bowl, and add salt and pepper.

Stir to combine seasonings.

Place on a parchment lined baking sheet, and roast at 400 F for about 25 minutes.

While the squash is roasting, melt the butter.

Finely chop the herbs while the butter is melting.

Add white wine to the melted butter.

Add roasted garlic.

Stir in the herbs.

Continue to simmer and slightly reduce until the butternut squash is finished roasting.

Make sure to toss the squash halfway during roasting.

Place the roasted squash in a bowl, pour the herbed butter over, and gently mix to combine.
