Marinate 800g,peeled,deveined prawns with 1/2 tsp each: salt,Chinese salt,white pepper; 1 egg; 2 tbsp soy sauce;3 tbsp cornflour. keep aside an hour
Deep fry in batches- two times. Fry a 20-30 seconds each side. Remove. Fry 2nd batch. Remove. Now fry all for the second time. Remove on paper towel
In a wok heat 1/2 cup chili oil. Add 2 heaped tbsp ginger garlic paste. Sauté a couple of mins.
Aside: Make a paste with around 10-12 whole red chilies (Kashmiri chilies). Keep aside
add:chili paste,1/4 cup ketchup,1.5 tbsp soy sauce,1 tbsp vinegar,1/2 tsp salt,1 tsp Chinese salt,1/2 tsp white pepper,2 tbsp sugar. Give it a mix
Add in 8-10 whole round chilies. Gradually add around 1.5-2 cups chicken stock (continue stirring). Bring to a boil.
Add in chopped spring onions and 1 chopped/diced capsicum. Mix
Add in fried prawns and mix
Add in cornflour slurry to thicken. Mix and let cook a couple of mins. Turn off stove.
