Shahi Tukra aka Royal 👑 Bread Pudding!
Start with reducing 2 cups of full fat milk to half it’s quantity. Or you can use heavy cream too.
When milk is reduced, add 2 🥄tbsps “paneer” to thicken. Add cardamom, saffron & sugar to sweeten.
The syrup is used to pour over the bread, followed by the thickened & reduced milk. Almost there..
Remove the crusts from 4 slices of bread, cut each piece into 4; have used 16 pieces in this recipe.
Deep fry pieces to golden brown in ghee or oil or a combination of both. Drain on a paper towel.
Lay fried pieces on a plate & slowly pour the sugar syrup you made in step 3 to sweeten each piece.
Pour the reduced milk aka “rabri” to each piece next. You may flip the sides & add more (optional)
Sliced almonds and crushed pistachios are typically used to garnish. You may want to put other nuts.
*Optional*-Soak few more strands of saffron in 2 🥄 tbsps of hot milk, looks and smells so good!
Garnish with nuts, dried fruits, pomegranate seeds. Enjoy SHAHI TUKRA from my royal kitchen!
