In a bowl add 1/2 kg chicken mince (completely dry); 1/4 cup chopped spring onion; 2 tbsp ginger garlic paste.

Add: 1 tbsp Kashmiri chilli powder;1 tbsp cumin;1 tsp Shan Achaari masala;1 tsp salt;1 tsp garam masala;3-4 heaped tbsp besan (gram flour). 1 egg.Mix

Form round kofta balls. Cover and refrigerate till gravy is being prepared

Slit 8-10 green chillies. Take 2 tbsp Shan Achar Masala & mix with juice from 1/2 a lemon. Stuff the masala into the chillies. Keep aside.

Into a pot add in some Achaar oil & a tbsp of regular cooking oil. Heat

- Add in 1 tsp whole cumin; 1/4 tsp fenugreek seeds; 4-6 red round chillies. Sauté

- Add 1/2 cup fried onion. Sauté. Add in a few tbsp water to avoid burning up

- Now add 2 tbsp ginger garlic paste and some water. Sauté.

Add & sauté 1/2tsp haldi,1/2tsp garam masala;1 tsp salt;1 tsp cumin;1 tsp chaat masala;1 tbsp roasted coriander;1 tbsp roasted cumin;1 tbsp dry methi

- Now add in some Achaar & mix it in. - Whisk 4-5 tbsp yogurt. Add in to pot. Mix

- Now add in purée of 3 medium tomatoes. Give it a good mix.

- Add 2 cup water. Bring to boil. Cover and cook 5 mins on low

- Add in kofta balls

- Add in stuffed chillies - Lower flame and cover lid to allow it to cook - Garnish with chopped coriander.

Shan Achaari Kofta tiyaar hai. Serve with rice
