Sheet Pan Marshmallow Topped Sweet Potatoes
Preheat oven to 425 F

Using a fork prick sweet potatoes on all sides & place on parchment lined sheet pan

Drizzle sweet potatoes with oil

Using hands, rub oil to cover entire potato and sprinkle with salt

Bake for 40-45 minutes turning half way

Check for doneness with fork. If it goes in easily they are done.

After they cool for at least 30 minutes, peelings easily come off!

Now slice into discs!

Lay out discs like this to form a rectangle, using scraps for any holes.

Dot with butter

Sprinkle with sugar and cinnamon

At this point pan can sit out till 30 minutes before dinner. Preheat oven to 350 F when ready

Bake for 20 minutes to warm up sweet potatoes

Add one bag of small marshmallows over top!

Place back into oven for 5-10 minutes watching carefully so it doesn’t burn!
