Sheet Pan Roasted Sweet Potatoes and Chicken
Gather your ingredients

Peel and cut sweet potatoes into bite size pieces

Cut onion into quarters and add to mixing bowl with potatoes and carrots

Add 1 tablespoon oil and toss until coated
4
Season with salt and pepper and toss again

Spread the potatoes, carrots and onions out evenly on a cookie sheet lined with aluminum foil

Bake in preheated oven at 425Β° for 15 minutes

Cut chicken into bite size pieces

Add 1 tablespoon of garlic & herb to chicken

Toss until chicken is fully coated, set aside

When timer is up, remove sheet pan from oven & flip potatoes. Push potatoes, carrots and onions towards edge of pan making a hole in middle of the pan

Add coated chicken to middle of the sheet pan
12
Cook for 15 minutes until chicken is fully cooked and potatoes are fork tender

Make your plate and enjoy!
