Make sauce/marinade: Add lime & orange juice and zest, jalapeño, garlic and salt & pepper to blender or food processor

Process until combined

Blend in the olive oil

Remove 1/4 cup of it and set aside

Add the cilantro and mint and process until smooth again

There is your Mojo sauce - cover and refrigerate to serve with the chicken when done

Place chicken in a large bowl & season well with salt and pepper, then add garlic, cumin, oregano and reserved 1/4 cup of sauce

Mix well - cover and allow to marinate for 1-4 hours but preferably overnight

Remove chicken and place on sheetpan. Nestle orange slices and shallots if using under and around chicken.

Drizzle with a little olive oil and then bake

Approx 40 min or until golden and cooked through, basting with pan juices a couple of times - then serve with remaining mojo sauce
