Start by peeling & deveining your shrimp. I’m poaching for 2-3 min in boiling water- turn off heat.

Remove shrimp from pot and set aside. In large mixing bowl add the juice of two lemons & 3 limes.

Let shrimp cool. Get fixings ready- parsley, jalapeño, red onion, pineapple pepper & tomato

Chop your shrimp into bite-size pieces and place in the lemon and lime juice!

Add your fixings!

Cover and refrigerate for at least one hour- up to 4!

Serve with plantain or sweet potato chips, pita or wonton crisps! Enjoy!
