Slice red onion thinly.

Add red onion to ice water and soak for a half hour. Then drain and set aside.

Slice hearts of palm. Then chop tomatoes and cucumbers into bite size pieces, removing seeds first.

Chop cilantro. Roll up like a burrito, then slice through it.

Add onion, tomatoes, hearts of palm, parsley, and cucumber to a bowl and stir.

Add pepper, salt, lime juice, and olive oil, then stir again.

Slice avocado, then add to the bowl. Mix gently so the avocado chunks stay as whole as possible.

Refrigerate 2-3 hours to let the flavors meld, then serve.
