Simple Perfect-Every- Time Roast Chicken
Make herb butter: stir together melted butter

Your fav herb mixture, garlic and lemon juice

Use a small spoon or your fingers to loosen skin from chicken - breast and Drumsticks only.

Pour most of the butter mixture under skin reserving some for on top of it

Fill cavity with the herbs and lemon wedges

Tie legs together with twine

Rub the rest of the herb butter over the chicken

Place garlic and onions onto roasting pan

Place chicken over garlic and onions

Pour wine or broth into pan (adds to the perfect pan juices or gravy)

Drizzle with olive oil

Allow to rest a few minutes before slicing

Then enjoy with the pan juices as sauce or make a quick and easy gravy with them - recipe included
