Simple Roast Pork with Apples & Pears
In a small bowl whisk together olive oil garlic and herbs

Season very generously with salt and pepper

Brush on herbed olive oil

Roast on high for 15 min then reduce heat and continue roasting 1/2 hour

Then remove from oven

Add broth, apples, pears & shallots

And roast another 30min (or until thickest part reaches 145 degrees)

Roast should be golden and fruit and shallots tender

Remove roast from pan and allow to rest 15 min

Remove apples pears and shallots and place on a platter

Add wine to drippings place over 2 burners & simmer until reduced a little(or transfer to sauce pan)

Add broth and cider and season with salt and pepper

Whisk in flour/water slurry & cook & continue to whisk until thickened enough to coat back of spoon

Then stir in the butter

Pour through a sieve and serve alongside your pork

Using bone in pork ensures a super moist, tender and flavourful roast

The sweetness of the apples pears and shallots nicely compliments the roast
