Simple Summer Salad
You’ll need: 1/3 cup olive oil, vinegar (I used sherry) a bunch of herbs, handful of greens (rocket)

5 Lebanese cucumbers, handful of walnuts, olives, finely grated Parmesan, 5 tomatoes, feta, 1 avo

Add 1/3 cup good olive oil, 2 tbs sherry vinegar and seasoning to bowl of chopped herbs. Season well

Add hard ingredients first - cucumber, walnuts, finely grated Parmesan and olives

Decant the salad onto a large serving platter

Before topping with the sensitive ingredients - tomatoes, feta and avocado. Season and gently toss

Serve and enjoy!
