Simple Wedding Soup With Chicken Meatballs

Italian Chicken Sausage
1/2 cup
Italian Seasoned Breadcrumbs
2 Tbsp
Olive Oil For Meatballs

Large Garlic Clove, Grated For Meatballs
1/4 tsp
Salt
2 Tbsp
Olive Oil For Browning Meatballs

Medium Garlic Cloves, Smashed And Peeled For Broth

Parmesan Rind
1/2 cup
White Wine
8 cups
Low Sodium Chicken Broth
1 and 3/4 cups
Orecchiette Pasta
3 big handfuls
Fresh Baby Spinach
For garnish
Parmesan Cheese (Grated)
Combine Italian chicken sausage, Italian breadcrumbs, olive oil, grated garlic and salt.

Use a medium cookie scoop to portion the meat then roll into about 1.5” meatballs with your hands.

Heat olive oil over medium heat and brown the meatballs for 2-4 min each side. Remove to a plate.

Add onion and garlic and sauté for 5-6 minutes until soft.

Add white wine and stir scraping up browned bits. Add chicken broth and Parmesan rind.

Bring to a simmer and add browned meatballs and pasta. Simmer for 20-30 minutes.

Remove Parmesan rind. Add spinach and stir until wilted.

Serve with grated Parmesan. Enjoy!
