Simple Weeknight Stir-Fry
Bring 1 cup brown rice and 2 cups water or broth to a boil, then cook over low heat for 45 minutes.

Prep veggies. I used 2 cups broccoli & mushrooms, 1 cup green beans, carrots & edamame + bok choy.

Add 1 Tbsp oil to a wok. Cook carrots & green beans 2 min. Add other veggies, not greens for 2-4 min

Add greens, cook a few minutes longer.

Prep toppings. Cut up green onion and cashews. Fry or scramble an egg if desired.

Top brown rice with veggies + toppings! For kids can separate out parts of the meal! Easy dinner 😀
