Slow Cooker Carne Asada Quesadillas
What you’ll need: flank steak, spices, beer, orange juice, lime juice, corn tortillas, cheese, salsa, onion, bell peppers, and oil.
Mix together paprika, cumin, chili powder, onion powder, garlic powder, and black pepper.
Place flank steak in the bottom of your slow cooker. Pour the spices over the beef, then add orange juice, lime juice, and beer. Slow cook 6 hours.
Shred the beef, strain, and set aside.
Heat oil on medium heat, and sauté the onions and bell peppers until softened.
Spray a pan with cooking spray and heat on medium. Spread salsa on a tortilla, then top with cheese, beef, peppers and onions, and more cheese.
After 4-5 minutes and its crispy on the bottom, spray the top tortilla with cooking spray and carefully flip. Cook for a 5-6 more minutes.
Cut in 4 pieces and serve with guac! Enjoy!
