Slow Cooker Chicken Casserole
Place chopped onion, carrot and sweet potato in pot.
Place browned chicken thighs on top.
Add red lentils, chicken stock/broth and herbs/spices.
Cook on high for 4-5 hrs or on low for 7-8 hrs.
Serve with mashed potato, rice or pasta as a filling and frugal family meal.
