Slow Cooker Christmas Cake
Soak dried fruit in black tea or brandy/amaretto

Cream together butter and light brown sugar

Beat in three medium eggs

Mix well to combine

Add flour, spices, vanilla bean extract

Fold in and combine

Add in the soaked fruit and any juices

Line the base and sides of a silicone pan

Put two upturned tins or saucers in slow cooker pot

Spoon the cake mixture into the pan

Put the pan in the slow cooker

Put a tea towel under the lid to catch drips

Cook on high for 3-4 hours until a skewer comes out clean and edges shrinking away

Put the pan on a cooling rack and leave the cake to cool fully

If serving right away, decorate with fruit and nuts as desired

Slice and serve!
