Slow Cooker Irish Lamb Stew
Sauté chopped onion in 1 tbsp evoo, then add carrot and leeks.

Transfer sautéed veggies to slow cooker, then add the cabbage and potatoes.

Add the lamb to the skillet, and brown each side of the meat over medium heat. Work in 2 batches if needed.

Add the browned lamb to the slow cooker.

Pour the chicken stock and water over the lamb.

Add sprigs of rosemary and bay leaf.

Cover the slow cooker, and set it to cook on low for 1 hour on high, followed by 7 hours 30 mins on low.

Stir in some baby spinach at the end of cooking time.

Serve and enjoy!
