Smoked Pork Loin with a Savory Rub
Smoked Pork Loin with a Savory Rub is easy to prepare and turns out perfectly juicy.

Gather and prepare your ingredients, and preheat the smoker.

Whisk together the olive oil and all the seasonings. Set aside.

Place the pork loin fat cap up on a cutting board. Score the fat in a diagonal pattern. Be careful to just cut the fat and not deeply into the meat.

Rub the spice mixture over all sides of the pork loin, working it into the scored fat cap.

Place the loin on the smoker. Cook at 180-200 F for about 1 1/2 hours. Check the internal temperature after about an hour.

When the pork reaches 140 F, remove from the grill to a cutting board. Tent the loin with foil for about 20 minutes bringing the temp to 145 F.

Slice across the grain for serving.
