Smokey Spicy Eggplant Mash aka Baingan Bharta

Wash & rub 🍆 with olive oil. Preheat oven ~350 F. Roast for 45 min, check blog post for full recipe

Remove & slit down the middle. Scoop out the flesh. *Fire roasting or bbq enhances smokiness of 🍆

Mash the eggplant 🍆 with a fork and add juice from half a lemon to prevent discoloration

Prep veggies- onion and tomatoes roughly chopped, ginger and green chilies finely chopped

Stir fry in olive oil and ghee on medium high heat for a minute only

Add spices- red 🌶 coriander, garam masala & turmeric. Stir fry for just one minute and stir well

Add mashed eggplant to it & stir fry for under a minute only. Avoid overcooking eggplant 🍆

Garnish with cilantro & cherry tomatoes, adjust the salt and 🍋. Cook time is~ 3 min in total! Enjoy!
