Smokey White Bean Shakshuka With Nduja
Heat oil in a large skillet

Add shallots and garlic and sauté until softened

Add nduja if using and cook breaking it apart (substitute with italian sausage out of casing)

Add the canned tomatoes crushing them with hands or with the back of the spoon

Simmer 4-5 min

Stir in white beans

Then the kale or spinach and cook until wilted 2-3 min

Make 4-6 little indents in the sauce and crack 4-6 eggs into them

Cover and cook

And simmer until they are cooked to your liking (8-10 min for firm whites and runny yolks)

Serve with crumbled feta, chopped fresh parsley and crusty bread
