Soft And Chewy Pumpkin Oatmeal Cookies
Beat butter and sugars together until creamy and fluffy.
Mix in pumpkin purée and vanilla extract.
In a separate bowl, add flour, oats, baking powder, baking soda, salt, and pumpkin pie spice.
Whisk together to combine dry ingredients.
With mixer on low speed, gradually add dry ingredients and mix just until combined.
Scoop batter out by rounded tablespoon.
Roll into balls and place on prepared baking sheet.
Bake at 325F for about 12 minutes. Cool on baking sheet for a few minutes.
Transfer to cooling rack.
Try not to eat them all in one sitting!
