Soft And Chewy Strawberry Jello Sugar Cookies
Beat together 1 cup butter and 3/4 cup sugar.

Add in a 3-oz package of strawberry Jello, reserving 1 Tbsp for frosting.

It should be nice and smooth.
Add in 2 eggs, mixing well to combine.

In a separate bowl, whisk together 2 1/2 c flour, 1 tsp baking powder, and 1/2 tsp salt.

With the mixer on low speed, gradually add the dry ingredients to the wet.

Mix just until combined and a soft dough forms.

Scoop out dough and roll into balls. Roll each ball in a shallow dish of sugar to coat.

Place on prepared baking sheet...

And flatten each ball slightly with the bottom of a drinking glass. Bake at 350F for 9-11 min.
Meanwhile, make the frosting by beating together 1/4 cup butter, 1 oz cream cheese, and 2 cups powdered sugar. Add milk 1 Tbsp at a time until smooth.

Add reserved Tbsp of Jello mix.
