Soft & Juicy Coconut Macaroons
Combine all ingredients apart from chocolate and coconut oil

Heat coconut batter until it reaches 50 C, or 122 F.

Just heat it until smooth and glue-like, but it should only feel warm, never hot.

Take the pot off the heat and stir. The batter will thicken as it cools, making for easy portioning.

Heat oven to 300F / 150 C

Using a tablespoon or small ice cream scoop, drop little mountains of coconut batter onto the sheet.

Bake for 20 min

Melt chocolate and coconut oil and stir until shiny.

Dip cooled macaroons into chocolate and let dry
