Soft Crinkle-Top Ginger Molasses Cookies
Mix flour, salt, baking soda, cinnamon, ginger, cardamom, cloves.

Cream soft butter with brown and white sugar until light and creamy.

Add 1 egg. The recipe calls for 1 egg but I bake at elevation so I’ll often use 2 medium eggs.

Add the dry ingredients & beat. For a soft & chewy cookie avoid over-mixing.

Scrape the sides & refrigerate at least an hour. A chilled dough is key to a crackle top.

Roll into golf ball sized cookies (about 2 tablespoons).

Roll in granulated sugar. Bake at 375f for 8-10 minutes.

These keep soft if bagged or jarred. They freeze great, too. Great for holiday baking!
