Blitz the white granulated sugar into super fine sugar.

Sift the GF flour.

Add the super fine sugar and mix.

Add the COLD butter cubes and incorporate into the flour mix, using your hands or a food processor.

Add the egg, salt and vanilla/lemon zest and mix just until incorporated using a spoon.

Depending on the GF flour you are using, add more GF flour a tbsp at a time until your dough stops sticking but is still SOFT (i added 2 tbsp).

Perfect consistency. Super SOFT but not sticky. Cover and place in the fridge for 1 hour.

Meanwhile grease your baking pans.

Once chilled, the dough should look like this.

Spread the dough well on the pans. Don’t forget to make edges. Don’t overwork the dough.

It’s essential to poke the dough in the middle. Finally bake on medium heat until it’s golden brown.

Wait until it cools completely before cutting, because it comes out of the oven super soft. Cover with chocolate spread, custard, jam, whipped cream…♥️
