Add water, sugar, salt, yeast, and half the flour to bowl and mix. Add melted butter and combine.

Add remaining flour and knead 5 minutes until soft. Let rise one hour.

Roll dough into 3-4 long snakes, about 3/4" in diameter.

Use a bench scraper or other tool to cut them into 3/4-ish inch pieces.

They should be fairly square as cutting them flattens them a bit.

You will end up with over 100 pieces. That's to be expected!

Boil a pot of water with baking soda. Add 3-4 bites at a time and boil 30 seconds.

Place boiled pretzel bites on a silpat covered cookie sheet. Make sure they don't touch.

Whisk your egg yolk with water, then brush it over each pretzel bite.

Sprinkle just a few grains of pretzel salt on each bite.

Bake at 450 degrees for 8-9 minutes, until golden brown.

Serve with cheese sauce or mustard. Store sealed on your counter up to two days.
