Soft-Baked Ginger Molasses Cookies

In a medium bowl mix 1/3C applesauce, 1/4C nut butter, 1/4C molasses, and 1t grated ginger.

Stir in 1/2C date sugar and 2t vanilla extract.

Mix in 1 2/3C oat flour, 1/2t baking soda, and 1/2t salt.

Scoop into 2T sized balls and flatten on a parchment-lined baking sheet. Bake at 350 for 14 minutes.

Let cool on a wire rack.
